Late Summer Fruit No Bake No Grain Crumble - Revisited

Oh boy! It's peach and blackberry season again! Definitely time to give this delicious, easy dessert a go.  Serve it with ice cream. Eat it for breakfast.  Impress your COVID bubble.

One of my regular customers at the farmers’ market told me about this super easy dessert recipe. With BC peaches in abundance, and blackberries falling off the bushes, I had to try it! This No Bake Fruit Crumble embodies the best of late summer, while offering up a healthy, delicious dessert that can be assembled in a matter of minutes. It will be a winner with your paleo and vegan friends and family.

While this recipe is made with local peaches and blackberries, I realize the opportunity for getting these fruits in season is limited to just a few fleeting weeks.  Feel free to mix it up with other soft fruits that don’t require baking. You can even use canned fruit in the winter to bring back fond memories of summer.

This crumble is delicious on its own or topped with your
favourite - dairy or vegan alternative - ice cream or yogurt.

Prep time: 10 minutes
INGREDIENTS
Filling:

3-4 good sized ripe peaches

1-2 cups blackberries

¼ cup sugar (optional)

1.5 cups Singing Bowl NO GRAIN Granola

 
DIRECTIONS
 
Wash the fresh peaches and cut them into slices (you decide whether or not to keep the peel).   Arrange the peach slices artistically on a pie plate. I find that for every sweet wild blackberry, there are three or four tart ones, so I like to add a bit of sugar to the berries before topping the peach slices.

If you are making this dessert in advance, refrigerate the fruit without the granola topping until you are ready to serve. 

Just before serving, sprinkle Singing Bowl NO GRAIN Granola over the fruit as you would any other crumble topping.
